The pure, dazzling glow of Chardonnay. Derbusco Cives' Blanc de Blanc is the essence of pure Franciacorta. Bright, vibrant, chalky, 100% Chardonnay from free-run must, 36 months on the lees, and a never-ending saline tension. Perfect as a signature aperitif, surprising throughout the meal. Limited to just a few bottles, for those seeking uncompromising elegance.
Derbusco Cives literally means “Citizens of Erbusco,” from a sixteenth-century spelling of the village’s name, which in turn descends from the Lombard “der busche,” meaning forest. The winery was founded in 2004 from the dream of five friends—Luigi Dotti, Stefano Pedrotti, Dario and Giuseppe Vezzoli, and Maria Paola Redoglio—over dinner. They chose Erbusco, the moral heart of Franciacorta, where the best DOCG vineyards are located on the morainic hills. 12 hectares, 80,000 bottles, and a no-compromises philosophy. Small production, manual harvesting, the “SoloUva” method without exogenous sugars, gentle pressing, and extremely long aging. The specially shaped bottles, specifically designed to promote aging, make Derbusco Cives Franciacorta wines unmistakable.
The Blanc de Blanc was created as a limited edition of the Doppio Erre Di, from which it differed in its aging time. Today, it is produced exclusively with the free-run must of 100% Chardonnay grapes, fermented exclusively in stainless steel. After a minimum of 36 months on the lees, it undergoes extensive bottle aging, lending, in addition to its usual freshness, a pleasantly mature note and a powerful structure.
A luminous straw-yellow color with delicate green hues reminiscent of the purity of Chardonnay. The nose immediately expresses a floral bouquet and complex citrus notes, including bergamot, cedar, acacia blossom, and a subtle hint of white pepper. The palate opens with great tension and exuberant freshness, supported by excellent salinity. The finish is long and vibrant with pleasant chalky notes, capable of evolving and maturing for several years. It is wonderful as an elegant aperitif and pairs perfectly with fresh cheeses seasoned with aromatic herbs, black bread crostini with buffalo mozzarella stracciatella and mint, raw scampi, oysters, sushi and sashimi, and both lean and fatty fish first and second courses.
