The Brut Metodo Classico is obtained from Chardonnay grapes grown in the vineyards of the Cembra Valley in Trentino of the Corvée winery. Fine perlage wine, wide bouquet with hints of ripe fruit, quince, apricot and broadsword pear, accompanied by aromas of custard and white chocolate. The taste is tasty and persistent, with notes of strudel, almond and dried fruit that envelop the palate.
Corvée is a French term that was used in feudalism to indicate a free job by the vassal for his master. The many hours of work of the vassals of the Cembra Valley in Trentino are due to the 400 km of terraces of dry porphyry walls that delimit a wonderful territory from the 250 meters of altitude of Mosana to the 1000 meters of Faver. Within this portion of land, the 14 hectares of vineyards of the Corvée winery extend, born with the idea of expressing the best of the potential of plants grown with environmental sustainability criteria and respect for traditions, useful for producing excellent wines in the DOC of Trentino, in many ways still unexpressed. Ambitious but successful project.
Corvée Brut is a classic method sparkling wine produced with fine Chardonnay grapes at 500 meters above sea level on sandy and stony soils that give it the pleasant minerality that distinguishes it. The maturation of the grapes is slow and allows the gradual accumulation of the aromatic components that are decisive for the personality of the wine. The harvest is manual in the first 10 days of September followed by soft pressing, static decanting of the must, temperature-controlled fermentation in stainless steel tanks, and aging on the lees for 6 months in French oak barrels, draft and stay on the lees for about 24 months.
