We are in the province of Vicenza, in the town of Malo to be precise.
Here, to say grappa is to say Dalla Vecchia, both because the family name has deep roots in the area and because of the contribution the family, over past generations, has made to grappa production and to establishing it as an exclusive product, a treasure of Italian craftsmanship. It was Giovanni Dalla Vecchia who built the first still in 1870, and that is where it all began. A story that has grown richer over the centuries and has come down to the present day with the same passion and drive.

Because every Libera Nos A Malo grappa reaffirms the union between the Vicenza area’s deep-rooted calling for quality grappa and distilling know-how passed down from father to son, from one generation to the next.
A strength of Dalla Vecchia grappas worth highlighting is the raw material: only fresh local pomace is distilled in steam-heated copper stills in batches. Ageing takes place in 225-litre oak casks, barriques: French oak for short ageing, Hungarian for long ageing.
Libera Nos A Malo 49°
This Dalla Vecchia grappa deserves special attention. It is the first and only unfiltered barrique grappa, outstanding for its quality and unique of its kind.
Made from a blend of Cabernet, Merlot and Raboso grapes, the spirit rests at 49° for eight years in heavily toasted American oak barriques. The flavour of the cask remains intact because the grappa is not filtered.
Libera Nos A Malo 49° grappa has a full flavour, ranging from hazelnut to liquorice, from chocolate to toasted wood. Its rich, complex flavour unfolds in the mouth and lingers for a long time.
Tasting it is an experience like few others. It should be served at room temperature in a wide glass and poured a couple of minutes before drinking.
Libera Nos A Malo Vintage
Still Libera Nos A Malo, still a grappa of superior quality. The Vintage is another Dalla Vecchia offering worth mentioning because it is a limited edition (around 1,000 bottles are produced each year) and because it is one of those grappas that refined palates cannot miss.
It is made from freshly pressed pomace, again from Cabernet, Merlot and Raboso, distilled in batches in small copper boilers. It is aged in American oak casks for 8 years.
A sipping grappa, to be served at room temperature in a wide glass, Libera Nos A Malo Vintage is rich and full, with a woody, bitter and slightly smoky aftertaste.
