Cabochon is the most prestigious Franciacorta from the Monte Rossa estate. It spends more than 60 months ageing in the bottle on its lees. Cabochon is the result of a search for the finest crus on the Monte Rossa hillside, and of a winemaking method that brings the barrique into the fermentation of the must.
Cabochon Monte Rossa is a Franciacorta made from 70% Chardonnay and 30% Pinot Noir. This brut is the fullest expression of the blend of farming tradition, innovation and passion that has always been at the heart of the estate’s outlook. Monte Rossa was the first to invest in experimentation and in the pursuit of excellence in Franciacorta, a choice made more than 40 years ago that proved both strategic and far-sighted. Cabochon Monte Rossa is the proof: it comes from an unmatched winemaking heritage and is produced only in particularly favourable vintages. Cabochon is a cuvée made entirely from cru wines. Its production follows a precise set of rules, so that the result deserves to be called the excellence of Franciacorta: the grapes are picked by hand into crates, and vinification involves a soft pressing with a selection of the best fruit, with a maximum yield of 48%. Fermentation takes place in 250-litre oak barrels, and the wine ages in the bottle for more than 40 months. First created in 1987, Cabochon Monte Rossa has earned the highest scores in the leading Italian guides and is often called “the Champagne of Franciacorta” for its elegance and longevity. Vintage after vintage, it remains the benchmark for its category.
Cabochon is exclusive at first sight too: bright and luminous, with a very fine, elegant perlage. Its aromas recall toasted hazelnut, peach, camomile flowers, biscuits and white chocolate. The finish surprises with hints of citrus and a mineral streak. Cabochon Monte Rossa is lively and long, a sparkling wine that impresses as an aperitif or at dinner with fish.
