I Sodi San Niccolò by Castellare is a wine with a red appearance with violet reflections, on the nose the bouquet opens with fruity hints of black cherry and plum jam with warm spicy notes, the taste is soft with important but velvety tannins and a fruity finish of black cherry and blueberry.
The history of the Castellare di Castellina winery takes us back to the 1970s, in the period of the Renaissance of Italian wine, when Paolo Panerai brought together 4 farms (Castellare, Caselle, San Niccolò, Le Case) to produce high quality wine. On the one hand, respect for the traditions of Chianti with the use of only native vines, such as Sangiovese, locally called Sangioveto. On the other hand, the introduction of innovative methodologies involving the University Research Institutes of the Universities of Milan and Florence, as well as the illustrious advice of oenologists of the caliber of Emile Peynaud, who was responsible for the refinement in barrique. It was thus, thanks also to the tireless Mezzadri, that a large winery was born, known today for producing high quality wines.
I Sodi San Niccolò by Castellare is born from a blend where, alongside 90% Sangiovese, we find a small percentage of Malvasia Nera. The vines of these two varieties are trained with the upside-down Guyot system, and grow in organically managed vineyards, located at a height of approximately 350-400 meters above sea level and characterized by a calcareous subsoil. The grapes, after harvesting, which always takes place in the last half of October, ferment in thermo-controlled stainless steel tanks, also carrying out malolactic fermentation. Then we move on to the refinement phase, in which the wine rests in barriques, 50% new, for a period of between 24 and 30 months.
