Chablis

Billau-Simon has a tradition of over two centuries of history, basing all the work in respect of the vineyards and the grapes themselves. The rigor in cultivation and the late harvest gives the Chalbis rich sensation of exceptional quality.

On the nose it joins perfectly combining citrus notes with toasted ones. On the palate it is wide, dry, long and lively. An astral circle of perfection and naturalness. The Chablis owes to the soil the inimitable quality of its freshness and its deep minerality. To be drunk young but also over time, it can be appreciated both for its freshness when young and for its complexity in maturity.
