Cantina St Michael-Eppan is a winery with a long tradition, founded in 1907. Located in the heart of Alto Adige, in an area suited to viticulture, the winery is dedicated to the production of high-quality wines, the result of a careful selection of grapes and cutting-edge production processes. Thanks to a deep knowledge of the terroir and a respectful approach to nature, the winery is able to best express the characteristics of each individual grape variety. Manual harvesting, followed by careful vinification in a modern plant, guarantees the highest quality of the products.

Fallwind Sauvignon from St. Michael-Eppan represents an oenological excellence of Alto Adige, the result of a combination of a noble grape variety and a unique terroir. This white wine, with a distinctive and complex character, is produced in the renowned Kellerei St. Michael-Eppan winery, located in one of the most suitable wine-growing areas of northern Italy. The name “Fallwind” comes from a meteorological phenomenon typical of the area, a cold and dry wind that sweeps the vines during the night, contributing to a slow and gradual ripening of the grapes. The vineyards of St. Michael-Eppan are characterized by calcareous and gravelly soils, rich in minerals, which give the wines a marked minerality and freshness. The high altitude and optimal exposure to the sun create an ideal microclimate for the cultivation of Sauvignon Blanc, enhancing its aromatic notes and structure. Sauvignon Blanc, an international grape variety with French origins, finds an ideal habitat in Alto Adige. In this area, the grape variety expresses its maximum potential, giving life to elegant and complex wines, characterized by an intense aroma and a marked acidity. Fallwind Sauvignon is distinguished by a broad and varied aromatic profile, with notes of white-fleshed fruit (peach, pineapple), aromatic herbs (tomato leaves, elderberry) and floral scents (elderberry, acacia). Fallwind Sauvignon is made in accordance with tradition and with the help of the most modern technologies. The grapes, hand-picked at the right level of ripeness, are softly pressed and the must ferments at low temperatures in stainless steel, in order to preserve the freshness and aroma of the fruit. Part of the wine can be refined on the fine yeasts for a few months, to acquire greater complexity and structure.

To the eye, Fallwind Sauvignon has a bright straw yellow color, with greenish reflections. On the nose, the bouquet is broad and complex, with fruity, floral and herbaceous notes that intertwine harmoniously. In the mouth, the wine is characterized by great freshness, lively acidity and a medium-light body. The finish is long and persistent, with returns of fruit and mineral notes. Fallwind Sauvignon is an extremely versatile wine, which lends itself to numerous gastronomic pairings. It is ideal to accompany fish dishes, shellfish, white meats, fresh cheeses and vegetables. It is particularly suitable for enhancing the flavours of asparagus, artichokes and oriental cuisine dishes.
