Description Technical details

The Kurtatsch Winery, located in the heart of Alto Adige, stands out for its winemaking approach that is strongly rooted in the territory. The wide difference in altitude of its vineyards, which extend from 220 to 900 meters above sea level, represents a unique feature in the European winemaking panorama. This extraordinary altimetric heterogeneity allows for the cultivation of a vast range of vines, each in its ideal habitat, expressing the peculiarities of the terroir to the fullest. The lower areas, characterized by a warmer and drier climate, are particularly suited to the production of full-bodied and structured red wines, capable of reflecting the minerality of the soil and the influence of the sun. As you climb in altitude, the climate becomes cooler and breezier, creating the optimal conditions for the cultivation of small-grape white vines, which give rise to elegant and aromatic wines, with a marked minerality and crystalline freshness. The management of the winery, entrusted since 2014 to a dynamic team led by President Andreas Kofler, is oriented towards high-quality production, in compliance with the principles of environmental sustainability. The close collaboration with the approximately 190 small associated agricultural companies, which cultivate a total of 190 hectares of vineyards, allows for an accurate selection of the grapes, guaranteeing the maximum expression of the terroir in each wine.

The name “Kofl” in the Alpine linguistic area evokes the image of a rounded peak, an iconography that perfectly reflects the morphology of the wine-growing territory from which this wine comes. Located close to the mountain range, the Kofl vineyards are characterized by steep slopes that determine a peculiar microclimate. In fact, the sun sets early, while the mountain winds, descending during the evening hours, bring a cool refreshment to the grapes, mitigating their excessive ripening and preserving their aromatic freshness.

The combination of these climatic factors with the geological characteristics of the soil makes the Penon-Kofl terroir an ideal environment for growing Sauvignon Blanc. The soils, rich in dolomitic limestone and characterized by excellent permeability, give the wine a pronounced minerality and a solid structure, which develops in complexity over time.

The vinification of Kofl is carried out with meticulous care to enhance the peculiarities of the grape variety and the terroir. After a short maceration on the skins, the must ferments at a controlled temperature in stainless steel tanks. It is then aged on the fine lees in large oak barrels and in concrete tanks for a period of 12 months, during which the wine develops an aromatic complexity and a softer structure. Kofl presents itself to the eye with a bright straw yellow color. On the nose, the bouquet is broad and complex, with notes of white-fleshed fruit (peach, pear), enriched by floral nuances (elderberry, acacia) and more herbaceous hints (sage, tomato leaf). On the palate, the impact is vigorous, with a well-integrated acidity that gives the wine freshness and flavor. The structure is solid, supported by an intense minerality that continues in a long and persistent finish.

In particular, we recommend pairing it with appetizers based on raw or marinated fish, such as tuna carpaccio or salmon tartare, enhancing their freshness and delicacy. Savory pies prepared with seasonal vegetables and stretched curd cheeses are another interesting option, thanks to the contrast between the flavor of the dish and the freshness of the wine.
