Etna Rosso DOC Mofete

The history of Palmento Costanzo begins in 2011 when the Costanzo family decided to start a recovery activity of an ancient palmento, the traditional Etna cellar used in the 18th century. Even though it is equipped with cutting-edge construction systems, created according to the principles of bio-architecture, the winery still retains its original internal structure today, with a multi-level arrangement in order to allow “gravity” vinification: in the highest level the grapes are pressed freshly harvested grapes, where they are separated from the stalks; the must that comes out reaches, by gravity, the fermentation vats, to then descend into the barrel cellar where the long refinement will take place.

Palmento Costanzo produces fine Etna DOC wines, within an area which, in 2013, became a UNESCO World Heritage Site, capable of guaranteeing high biodiversity. We are precisely in the district of Santo Spirito, in the hamlet of Passopisciaro in the province of Catania, a small pearl set on the lava of Etna, recognized as one of the most suitable areas of the denomination. It is particularly rich in organic substances and the soils are characterized by brown volcanic origins resulting from the disintegration of lava deposits. The fertility of the land allows for flourishing cultivation, which in this case is trained as a sapling, given the strong presence of wind and atmospheric agents. In the owned vineyards there are also many ungrafted vines, prephylloxera, plants of inestimable historical and oenological value.
