The Kellerei Bozen winery Mock Sauvignon has a straw yellow color with greenish reflections. On the nose fruity aromas such as yellow peach and pink grapefruit and then acacia, elderberry, floral notes such as mint, nettle and tomato leaves. On the palate fruity flavors announced on the nose with sweet sensations but with an acidity that helps drinking and completes it.
The Sauvignon Mock from the Cantina di Bolzano is located on the estate of the same name, whose vineyards extend along the steep slopes in the surroundings of Bolzano, at an altitude of 500 meters above sea level.
It is produced only from Sauvignon Blanc grapes, harvested during the month of September. After soft pressing of the grapes, the must ferments in steel at a controlled temperature. The wine matures in steel barrels inside which it preserves its freshness.
