The Ripa is a wine made from Sangiovese, Merlot and Cabernet Sauvignon, from the first selection of the grapes of the "new vineyard": ten years of age. It is initially stored for 70% steel and 30% in small oak barrels for about nine months and then aged in the bottle for at least a further 18 months, at 15 ° C temperature. First produced in 1999
Above the vineyard Ripa is located on the edge of the medieval village of Sovana in the town of Sorano in the province of Grosseto at a height of 350 meters above sea level. It is suspended on a strip of land between Mount Amiata and the sea, where the temperature ranges throughout the year reaching 50 degrees. The cold brought by the peaks of the mountains often snow-covered in winter alternates with sirocco strong currents that come from the Maremma coast. The ten hectares of vines are planted company, on a tuff and volcanic soil, Sangiovese 70%, Merlot 10%, Cabernet Sauvignon 5%, 2.5% alicante, ciliegiolo 12.5% with a mean age of the vine between 10 and 49 years. Pruning is done in the months of January-February leaving two buds per spur and six per plant.
