The Sauvignon by Elfenberg is characterized by a fermentation in a steel tank at a controlled temperature of 16 ° C which favors a unique aroma. The bouquet of this wine is exotic, with fruity notes of mango, papaya, lime, red grapefruit, and a typical aftertaste of aromatic herbs such as lemon balm, green tea and tomato leaf.
The Elfenberg winery was founded in Alto Adige with the intention of enhancing the winemaking tradition of this area, a heritage to be valued and preserved. From here, constant care in the pursuit of excellence, with the sole aim of producing excellent quality wines representing the uniqueness of the vineyards from which they come.
The vines from which Elfenberg’s Sauvignon Blanc comes from are grown with the Guyot system on clayey and sandy soils at 400 meters above sea level. Once ripe, the grapes are processed in a controlled atmosphere to preserve their typical aromatic component. Hence the fruity notes on the nose, and a pleasant acidity on the palate, the slightly bitter nuance and the full and persistent flavor.
