Mezcal is the distillate obtained from the agave plant produced in Mexico since the time of the Atzeks, hence the name inspired by the legend of Princess Donaji with which the Tradición Chagoya distilleries pay tribute to its mythical and ancestral nature.
The Tradición Chagoya distillery was founded in 1897 in the Tlacolula district of Oaxaca, the area par excellence of the Mezcal. It’s a family-run company now in its fourth generation that exports artisan Mezcal all over the world, respecting the ancient production techniques that have remained today as they used to be. It’s a distillate that differs in three varieties according to the type of agave used: espadin, cuishe and tobalà.
The Mezcal Donaji Ensemble is obtained from the varieties of agave espadin and cuishe, according to a totally natural process that does not use any chemical additive. As tradition dictates, the agave piñas are cooked in a conical oven and then let go by a large stone wheel pulled by a horse, followed by spontaneous fermentation for eight days. The final step is the double distillation in copper alembic from which an excellent Mezcal is obtained, whose hints of freshly cut agave mix with notes of fresh herbs and citrus fruits that envelop the palate.
