Rhum VOSP

Located in the small northern village of Macouba, Martinique, at the foot of the iconic Mt. Pelée volcano, Rhum JM produces the best AOC Rhum Agricole from sugar cane grown on the estate. Considered the first registered distillery to produce Rhum Agricole, there is no freshest sugarcane crush in the world, as sugarcane takes less than an hour to go from the field to the fermentation tank. In 1845 Jean-Marie Martin bought the house and created the J.M brand and began selling his rum and, from a traditional sugar refinery, the distillery became exclusively “agricultural”. A little more than 100 years later the present distillery was built, the first aging cellar in 1980 and the second in 1995. In 1984 the bottle and the JM label were created by Chantal Duchamp de Chastaigné. The company boasts 300 hectares of properties at the foot of Mount Pelèe, 150 dedicated to sugar cane of three types: canne rouge, canne bleue and canne paille, the other 150 hectares dedicated to the cultivation of bananas almost entirely for export. With 11 fermentation tanks for a total capacity of 23 thousand liters, fermentation lasts 24 hours using selected yeasts and pure water from the volcanic springs of Mount Pelèe. The 2 aging stockhouses have a capacity of 3500 barrels with 220/230 liter capacity in American white oak, mostly ex-bourbon and a small part new.
