Fichimori is the red wine that must be drunk cold produced by Tormaresca Masseria Maìme, inspired by the Apulian tradition that when it's hot the wine must be served cold. It's a Salento IGT red with a purple color with violet reflections, accompanied by aromas of pomegranate, cherry, strawberry and raspberry. Characterized by a pleasant, fresh and soft taste, it's an excellent travel companion before, during and after dinner.
The great tradition of the Antinori family from Tuscany arrives in Puglia at the end of the 1990s in that territory of the Murgia and the northern Salento where wine has been produced since Roman times, took over the Tormaresca winery and founded the new winery of Masseria Maime, conceived according to the most modern theories on the vinification of Renzo Cotarella. In this wonderful context made of fields and olive trees, where the largest quantities of wine grapes have always been produced since ancient times, it started an hard work of valorisation of native vines such as Primitivo, Negroamaro and Aglianico begins, guided by the rediscovery of the “terroir” kept for centuries.
From this story Fichimori is born, which re-launches the tradition of cold drinking red, stimulating new trends that make it the basis of a summer cocktail. Thanks to Tormaresca’s modern winemaking techniques, the wine maintains its organoleptic properties unaltered with an artfully regulated process that gives pleasure to the wine, keeping the tannins soft. Ideal for a fresh aperitif, raw fish and vegetable-based first courses.
