Etna Bianco DOC Mofete

The history of Palmento Costanzo begins in 2011 when the Costanzo family decided to start a recovery activity of an ancient palmento, the traditional Etna cellar used in the 18th century. Even though it is equipped with cutting-edge construction systems, created according to the principles of bio-architecture, the winery still retains its original internal structure today, with a multi-level arrangement in order to allow “gravity” vinification: in the highest level the grapes are pressed freshly harvested grapes, where they are separated from the stalks; the must that comes out reaches, by gravity, the fermentation vats, to then descend into the barrel cellar where the long refinement will take place.

Palmento Costanzo produces fine Etna DOC wines, within an area that became a UNESCO World Heritage Site in 2013, capable of guaranteeing high biodiversity. We are to be precise in the district of Santo Spirito, in the hamlet of Passopisciaro, a small pearl set on the lava of the volcano recognized as one of the most suitable areas of the denomination, particularly rich in organic substance and minerals, whose soils are characterized by volcanic brown resulting from the disintegration of lava deposits. The fertility of the land allows for flourishing sapling cultivation supported by chestnut poles of the native Nerello Mascalese, Nerello Cappuccio vines (the union of which produces the excellent Etna Rosso, Carricante and Catarratto. In the property vineyards there are also many pre-phylloxera vines, inestimable historical and oenological value.

The Etna Bianco DOC “Mofete” by Costanzo comes from vineyards located between 680 and 750 meters above sea level, grown on land where there is a strong presence of volcanic sand and lava deposits. After the strictly manual harvest, the grapes are softly pressed and remain to refine in stainless steel containers in contact with the fine lees for 6 months, at the end of which the bottling operations proceed.
