Cecerale is a wine produced by the San Salvatore winery, with a pale straw yellow color, with light greenish reflections. On the nose, hints of green apple and pear prevail, followed by very delicate floral notes, in the mouth it is very fresh, savory and with excellent balance.
The San Salvatore 1988 farm was born in a unique terroir in the heart of the Cilento National Park where hills and small mountains come close to the sea. A soil rich in minerals and an ideal exposure for a healthy ripening of the grapes. An agriculture where the interaction of man only serves to support what nature had established. Manual harvest in small plastic crates. The grapes are softly pressed, de-stemmed and brought to 4 ° C and cryomacerated for 6 hours. After fermentation in steel vats at a very low temperature, it is refined for 6 months on its own fine lees.
