Description Technical details

Cantine Umberto Bortolotti is one of the most historic and prestigious companies in the Valdobbiadene area, renowned throughout the world for the production of Prosecco Superiore DOCG. Founded over seventy years ago, the company has established itself in the Italian wine scene thanks to its constant pursuit of excellence and in-depth knowledge of the territory. The company operates exclusively in the hilly areas of Conegliano and Valdobbiadene, where Glera, a native grape variety and the prince of Prosecco, finds the ideal soil and climate conditions to best express its aromatic characteristics. The soils, characterized by good depth and the presence of clay, marly sandstone and Miocene molasse, offer the vines the nourishment necessary to produce high-quality grapes. Bortolotti’s production philosophy is based on a combination of tradition and innovation. On the one hand, the company preserves the ancient winemaking techniques, handed down from generation to generation, on the other, it invests in cutting-edge technologies to guarantee the highest quality and the constant evolution of its products. The choice to work exclusively with local winemakers, with whom a relationship of trust and collaboration has been established, allows to control the entire production chain and to guarantee the typicality of the final product. The company is strongly committed to protecting the environment and promoting sustainable agricultural practices. The reduction of environmental impact, the optimization of the use of resources and the enhancement of the territory are at the center of the company policies. The Cantine Umberto Bortolotti represent a point of reference for lovers of Prosecco Superiore DOCG. Passion, competence and attention to detail are the ingredients that make Bortolotti wines a unique and unforgettable experience.

Produced by the Bortolotti company, this sparkling wine is made from Glera (85%) and Glera Lunga (15%) grapes grown in the renowned Valdobbiadene area, in the Ron area. The choice to also use the less widespread Glera Lunga variety gives the product a unique aromatic complexity and structure. The vines are grown on moraine soils, characterized by a high clay component that gives minerality to the wine. The altitude between 290 and 310 meters above sea level and the Sylvoz training system help create an ideal microclimate for the ripening of the grapes, enhancing their varietal characteristics. After careful manual harvesting on September 27, 2022, the grapes were subjected to a soft pressing to preserve the integrity of the fruit. The must obtained was vinified in stainless steel at a controlled temperature (16-18°C) for approximately 15 days, followed by aging on the fine lees for 5 months. The secondary fermentation took place in the bottle on 18 April 2023, with a second fermentation at 13°C and subsequent aging on the lees for over 14 months. The choice not to filter the wine allows for greater aromatic complexity and greater vivacity.

To the eye it presents itself with a bright straw yellow color and a fine and persistent perlage. On the nose, in addition to the classic hints of yeast, intense fruity notes of golden apple, white peach and delicate citrus nuances can be appreciated. In the mouth, the structure is balanced and the bubbles are fine and creamy. The fruity flavors are found in a long and persistent finish, enriched by pleasant mineral notes and a pleasant bitter almond. Perfect as an aperitif, it pairs well with raw fish dishes, shellfish, delicate risottos and fresh cheeses. It should be served at a temperature between 8°C and 10°C in a large glass and flute to enhance its aromas and perlage.
