The Wilson & Morgan Caol Ila 2010 is a straw yellow colored whiskey with golden reflections, its incredible balance is immediately perceived on the nose, followed by its fresh and clean aroma. In the mouth it is immensely sweet and vanilla with a light spicy note, with a fascinating finish.
Islay is one of the largest islands in Scotland where, fertile lands and pure water of a wonderful and unspoiled landscape caressed by the fresh breeze of the sea waters, has seen the birth of some of the best single malt whiskeys in history.
The Caol Ila distillery was founded in 1846 by Hector Henderson. In 1854 it was crossed by Norman Buchanan and in 1863 by Bulloch Lade & C. Ltd. In 1920 it was taken over by a consortium of businessmen that formed the Coal Ila Distillery Company Ltd. and in 1930 the property passed to Scottish Malt Distilleries Ltd: the distillery later came into the possession of the multinational group Diageo.
Wilson & Morgan is an independent bottler who since 1992 selects the best single malts to continue aging in ex sherry, marsala or bourbon barrels. The result is decidedly superior: young whiskeys, capable of thrilling with their sincere and sincere intensity and rare single malts in limited and numbered editions, aged up to 40 years. An exciting new release stemming from our long experience with maturation. This bottling is a vatting of five casks with a finish in fist fill bourbon, and two in virgin American oak. The result is the perfect equilibrium between the salty, dry, mineral taste of classic whisky from Caol Ila and the contribution from the virgin oak, which adds a creamy, buttery, robust backbone of sweetness: it’s rich, fuller bodied and bolder than usual, with the notes of vanilla and soft tannins that are expected from this kind of barrels. The secret lies in the balance, because the lighter bourbon casks still provide a classic lively counterpart with their intensely smoky and sharp notes of the sea. This is still Islay… but with a new sweeter twist.
