Tenute Navarra grew out of Totò’s dream, with roots in the Sicilian soil going back to 1951. After years of experience and work, in 2019 he realised his plan to champion the land he came from, buying an estate at Butera, in the heart of Sicily. Together with his family he carries forward a vision that joins tradition and innovation, bringing out a terroir like no other between the sea and the inland hills, rich in history and identity.
This Extra Brut Blanc de Blanc is made from Grillo alone, vinified in steel to preserve its fragrance and aromatic integrity. The second fermentation takes place in pressurised tank by the Martinotti method, for more than two months, giving a fine, elegant and persistent perlage. The result is a modern sparkling wine, fresh and very drinkable.
The nose shows intense thiolic notes, with echoes of unripe fruit, citrus and green apple. The palate is fresh and easy, with a fine, lively bubble and a long, persistent finish. Perfect as an aperitif, it goes with seafood starters, raw fish, shellfish, light fried dishes and vegetable dishes.
