Centuries of experience, combined with modern technology and the great passion of those who collaborate in the vineyard and in the cellar, leads to the creation of wines with great personality capable of expressing all the potential of this border terroir. Novacella Abbey is located in the northernmost wine-growing area of \u200b\u200bItaly, in Alto Adige, where the altitude, between 600 and 900 meters, the cool climate and mineral-rich soils, allow for the optimal development of aromas and flavor, typical characteristics of the wines of the Isarco Valley such as Sylvaner, M\u00fcller Thurgau, Kerner, Gew\u00fcrztraminer, Veltliner, whose grapes thrive on the sunny slopes around Novacella. The red grape varieties owned by the estate, however, are grown further south in the region, namely Lagrein near Bolzano, Schiava Gentile, Pinot Noir and Moscato Rosa on the Corniano estate. Today the Abbey has 25 hectares of property, but produces wine from grapes from around fifty hectares cultivated by members of the cooperative. The control of the grapes by the members and the passion with which the Abbey has dedicated itself to the production of wines for centuries are synonymous with absolute quality, with labels that are faithful custodians of centuries-old traditions, never betrayed by innovative methodologies.<\/p>\n
The Gew\u00fcrztraminer Praepositus from the Novacella Abbey represents an expression of excellence of the Gew\u00fcrztraminer grape variety in Alto Adige. Produced by the historic cellar of the abbey, this wine embodies a combination of monastic tradition and modern winemaking, giving life to a unique and distinctive product. The Gew\u00fcrztraminer grapes used to produce Praepositus come from selected vineyards, located about six hundred meters above sea level, facing south-southwest. This particular exposure, combined with the cool and breezy climate of Alto Adige, gives the grapes a slow and gradual ripening, favoring the development of intense and complex aromas. The soils, predominantly calcareous and porphyritic, contribute to giving the wine a pronounced minerality and a solid structure. The vinification of Praepositus takes place following rigorous protocols that aim to preserve the aromatic integrity and freshness of the grapes. After manual harvesting and careful selection of the bunches, the grapes are gently pressed and the must ferments at a controlled temperature in steel. Subsequently, the wine ages on fine yeasts for several months, during which it acquires complexity and finesse.<\/p>\n
Intense straw yellow color with golden reflections, a testimony to the ripening of the grapes and the aromatic richness of the wine, the olfactory bouquet is broad and complex, characterized by intense notes of exotic fruit (lychee, mango, pineapple), white flowers (rose, jasmine), spices (cloves, ginger) and a delicate note of honey.
On the palate, Praepositus is full-bodied and enveloping, with a natural sweetness well balanced by a lively acidity.
