Islay is one of the largest islands in Scotland where, fertile lands and pure water of a wonderful and unspoiled landscape caressed by the fresh breeze of the sea waters, has seen the birth of some of the best single malt whiskeys in history.<\/p>\n
The Caol Ila distillery was founded in 1846 by Hector Henderson. In 1854 it was crossed by Norman Buchanan and in 1863 by Bulloch Lade & C. Ltd. In 1920 it was taken over by a consortium of businessmen that formed the Coal Ila Distillery Company Ltd. and in 1930 the property passed to Scottish Malt Distilleries Ltd: the distillery later came into the possession of the multinational group Diageo.<\/p>\n
Wilson & Morgan is an independent bottler who since 1992 selects the best single malts to continue aging in ex sherry, marsala or bourbon barrels. The result is decidedly superior: young whiskeys, capable of thrilling with their sincere and sincere intensity and rare single malts in limited and numbered editions, aged up to 40 years. The Caol Ila Wilson & Morgan 15 cask strengh 30 th anniversary\u00a0textbook example of how well the sherry\u00a0and the peat can be well integrated into a\u00a0whole that\u2019s more than the sum of its parts:\u00a0no fight of clashing flavours, just a perfect\u00a0match that flows organically. The nose is only\u00a0slightly smoky: it\u2019s more of a leathery and\u00a0farmy profile, with balsamic touches of\u00a0camphor and mint, backed by an\u00a0impressively fruity note. Oranges, peaches,\u00a0red apples, cherries, and even a whiff of\u00a0tropical fruits salad. The smokiness takes its\u00a0rightful place at the palate: intensely peated,\u00a0but again so well integrated into the whole\u00a0tapestry of tastes. The sootiness is enveloped in a creamy and fruity blanket, overall dry in\u00a0tone but with a hint of sweetness. Orange\u00a0marmalade, and classic Italian \u201caperitif\u201d red\u00a0bitters.
