A soil rich in minerals and an ideal exposure for a healthy ripening of the grapes. An agriculture where the interaction of man only serves to support what nature had established. Manual harvest in small plastic crates. The grapes are softly pressed, de-stemmed and brought to 4 \u00b0 C and cryomacerated for 6 hours.
