Paolo Panerai is the enlightened entrepreneur to whom we owe the success of a historic Chianti Classico winery such as Castellare di Castellina, and the birth of the Feudi del Pisciotto winery which extends for 44 hectares on the hills between Caltagirone and Piazza Armerina in the heart of Sicily. The main grape is Nero d’Avola, and the winery is characterized by the historic millstone in which wine was made already at the time of the Greeks and Romans. The grapes grown in the Niscemi vineyards are harvested in September, and vinified in steel and then aged in barrique for the first 8 months, and in the bottle for the following 8.
