Corv\u00e9e Brut is a classic method sparkling wine produced with fine Chardonnay grapes at 500 meters above sea level on sandy and stony soils that give it the pleasant minerality that distinguishes it. The maturation of the grapes is slow and allows the gradual accumulation of the aromatic components that are decisive for the personality of the wine. The harvest is manual in the first 10 days of September followed by soft pressing, static decanting of the must, temperature-controlled fermentation in stainless steel tanks, and aging on the lees for 6 months in French oak barrels, draft and stay on the lees for about 24 months.<\/p>\n
