Corv\u00e9e is a French term that was used in feudalism to indicate a free job by the vassal for his master. Corv\u00e0ia is a vineyard at 654 meters above sea level where Pinot Grigio grapes are grown on a rocky porphyry soil, from which the elegance and pleasant minerality of this wine come. Exposure to the sun, and the thermal conditions generated by the dry stone walls which retain the heat during the day and release it at night, together with the light ventilation, contribute to the success of this pure Pinot Grigio. The harvest is manual at the end of September followed by the static decanting of the must, fermentation at controlled temperature in stainless steel tanks, and aging on the lees in French oak barrels, with further aging in the bottle for about 6 months before being marketed.<\/p>\n
