The production of this wine is not simply inscribed in the winemaking process, but was founded in 1985 by the company&#8217;s love for quality grapes that make every single product special. What makes Merlot so unique are also the different types of vinification dedicated to it depending on the year: the first is based on softness, thanks to repassing, &#8220;d\u00e9lestage&#8221; and oxygenation of the must in fermentation; the second focuses on the taste structure, through the submerged cap technique, and on longer macerations.
