The winemaking process begins with the \u201cpink\u201d maceration which gives the sparkling wine its color; we proceed with fermentation in small barrels and steel vats at a controlled temperature; this is followed by refinement, the creation of the cuv\u00e9e, bottling and further refinement on the lees. It all ends with the d\u00e9gorgement in the absence of oxygen through a passage specially created by Ca &#8216;del Bosco.<\/p>\n<p>The salmon pink color opens to the nose with pleasant floral hints of rose and peony, and fruity notes of pomegranate and strawberry.
