Ribolla Gialla is the perfect picture of Damijan Podversic\u2019s philosophy: a great wine, complete, like a great woman.<\/p>\n
Podversic is one of the people behind the renewal of winemaking in the Collio. His work draws on the teaching of Josko Gravner: at first Podversic vinified in wood, and later chose to macerate the grapes and to follow the theories on the influence of the moon and the constellations on the earth\u2019s ecosystem in deciding when to harvest and how to time each stage of the work.<\/p>\n
The Podversic vines sit in a beautiful natural amphitheatre of terraces open to the south and ringed by woodland, in the Monte Calvario area. Here Damijan farms with biodynamic methods: he protects the ecosystem through natural viticulture that respects and regenerates the soil, the plants and the land around them. For the Ribolla Gialla too, Damijan ferments in small wooden casks, with no added yeasts.<\/p>\n
