A fundamental requirement in grappa production is in fact the origin of the grape seeds and skins, which must come only from grapes grown and vinified in Italy.<\/p>\n<p>But what are its origins? How is grappa made, and how many types are there?<\/p>\n<p><a href=\"\/en\/catalog\/spirits\/grappa\/\">Our selection of grappas<\/a> offers plenty of choice for every palate. But it was only in 1951 that grappa acquired its current definition: the only spirit in the world made from a solid raw material, pomace.<\/p>\n<p>Grappa is produced <strong>from the fermentation of pomace<\/strong>, the leftover residue from winemaking, which includes the skins and pips, that is the seeds inside the grapes.<\/p>\n<p>The pomace that reaches the distillery can be of three types: <strong>fermented<\/strong>, <strong>unfermented<\/strong> (virgin) and <strong>partially fermented<\/strong>. The first contains a percentage of alcohol from its earlier fermentation with the wine must; the second is almost always white and is called virgin because, having not fermented with the must, it contains no alcohol; the third comes from certain sweet or ros\u00e9 wines that have undergone a brief maceration with the must. In the last two cases it is important for the distiller to induce fermentation, as it is essential for the subsequent distillation stage.<\/p>\n<p>Fermentation, through the action of certain cellular micro-organisms, the yeasts, is in fact decisive in turning sugar into alcohol. To make a spirit you must always start from a substance that has already fermented and therefore contains alcohol. <\/p>\n<div id=\"A1-2\"> <\/div>\n<h3>Distilling grappa<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"\/wp-content\/uploads\/blog\/la-distillazione-della-grappa.webp\" alt=\"Distilling grappa\" width=\"870\" height=\"300\" \/><\/p>\n<p>The distillation stage is fundamental to the success of the final product; specifically, it is a physical process that separates the volatile parts of a fermented liquid which, once heated, allows the alcoholic vapours to evaporate together with the aromas. Then, as the vapours cool, a liquid with a high alcohol content is obtained.<\/p>\n<p>Three things are needed to make an excellent spirit:<\/p>\n<p>\u2022 <strong>a good raw material<\/strong>: the pomace;<br \/>\u2022 <strong>a skilled master distiller<\/strong>;<br \/>\u2022 <strong>a still<\/strong>: a batch still for artisanal grappa and a continuous still for industrial production.<\/p>\n<p>The grappa distillation process begins by heating the pomace placed inside the boiler of the still. This step evaporates the volatile substances, the alcohol, along with a good percentage of water. It is important to stress that not all volatile substances are desirable; many are unpleasant and harmful to human health, such as methanol, which is why the role of the master distiller is fundamental: he must carry out <strong>rectification<\/strong>. This stage consists of cutting off the heads of the distillate, containing methanol and other toxic substances, and the tails, containing fatty and oily substances. In short, the distillation process must lead to collecting only the heart of the distillate, the central part rich in ethyl alcohol and in all the fine, pleasant aromatic substances that make grappa a product of absolute quality.<\/p>\n<div id=\"A1-3\"> <\/div>\n<h3>Reducing the alcohol content<\/h3>\n<p>Once distillation is complete, the product has an alcohol content unsuitable for human consumption, at around 65 to 86% ABV. To give grappa balance, it is necessary to <strong>reduce the alcohol content<\/strong>, which in grappa can range from 37.5 to 60% ABV. The reduction is done by adding distilled or demineralised water: the alcohol must be in balance with all the components of the product so that it is pleasant and does not mask the aroma. <\/p>\n<div id=\"A1-4\"> <\/div>\n<h3>Ageing<\/h3>\n<p>Unlike many other spirits that need a period of ageing before they are drunk, grappa does not need this step. Many producers, however, still choose to rest the product in special containers or wooden casks, which can give the various types of grappa particular organoleptic qualities.<\/p>\n<div id=\"A1-5\"> <\/div>\n<h3>Filtration<\/h3>\n<p>This stage is essential to give grappa back its typical <strong>crystal-clear colour<\/strong>. After water is added during the alcohol reduction stage, the product is rich in insoluble oily substances that must be removed. By chilling the grappa to a temperature between -4 \u00b0C and -15 \u00b0C, these substances are filtered out, leaving the product ready for bottling.<\/p>\n<div id=\"A2\"> <\/div>\n<h2>Types of grappa<\/h2>\n<p>Many different grappas are available today on the Italian and international markets. The variety of grappas depends on several criteria, such as the geographical designation of origin, the grape variety and the still used. Types of grappa can also be distinguished according to the organoleptic characteristics of the product.<\/p>\n<div id=\"A2-1\"> <\/div>\n<h3>Young grappa<\/h3>\n<p>It is the <strong>simplest spirit<\/strong>, because it has only the direct, fruity, no-frills flavours and aromas that emerge from distillation. <\/p>\n<div id=\"A2-2\"> <\/div>\n<h3>Aged grappa<\/h3>\n<p>So called because it is aged in wooden casks for at least 12 months; during this time the wood imparts colour, aromas and flavours, giving the aged spirit a more velvety, smooth taste. For riserva or stravecchia grappa, ageing in wooden casks must last no less than 18 months.<\/p>\n<p><strong>Grappa Segnana<\/strong><\/p>\n<p>Among aged grappas, we cannot fail to mention a leader in the field: Grappa Segnana. Founded in 1860 by Paolo Segnana, this distillery was taken over in 1982 by the Lunelli family, producers of Ferrari sparkling wines. Grappa Segnana owes its distinctive, unique flavour to the pomace from the soft pressing of the grapes used to make Ferrari. Three types of grappa make Segnana one of a kind: white, aromatic and aged.<\/p>\n<p>It is <strong>Grappa Segnana Invecchiata<\/strong> that is most faithful to Trentino traditions. Already explosive and full of aromas, these grappas have no need of wood ageing, which would only alter their aromatic richness.<\/p>\n<div id=\"A2-4\"> <\/div>\n<h3>Barrique-aged grappa<\/h3>\n<p>Barrique-aged grappa, or grappa barrique, is born of the skilled passion of master distillers who, through a long and elaborate process, have created a high-quality product: a grappa rich in unique flavours and aromas. In particular, this type of grappa is aged for at least 12 months in wooden casks, 6 of which must be in French oak barriques, the classic 225-litre Cabernet Sauvignon casks. The small size of the barriques gives the product more oxygenation, allowing it to develop all the aromatic and organoleptic properties that make barrique-aged grappa unique and precious. <\/p>\n<div id=\"A3\"> <\/div>\n<h2>The best barrique-aged grappa<\/h2>\n<p>Several distilleries have made barrique-aged grappa their flagship product. But which is the best barrique-aged grappa? The answer is actually very simple: while all grappa is acquavite, not all acquavite is grappa.<\/p>\n<p>Acquavite is in fact a generic term, a synonym for distilled spirit, and refers to a spirit drink produced by distilling a fermented sugary liquid. The term therefore simply indicates a spirit, without specifying anything else; but when it refers to the raw material being distilled, it takes on a different meaning: pomace (grappa), wine (cognac, brandy), potatoes (vodka) and so on. <\/p>\n<div id=\"A6\"> <\/div>\n<h2>Grappa glasses<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"\/wp-content\/uploads\/blog\/i-bicchieri-da-grappa.webp\" alt=\"Grappa glasses\" width=\"870\" height=\"300\" \/><\/p>\n<p>It is commonly thought that all glasses are the same and that it makes no difference which one you use. In reality, when tasting a fine spirit such as grappa, the glass makes all the difference.<\/p>\n<p><strong>Which grappa glass is the right one to use?<\/strong><\/p>\n<p>It is important to be clear that the Italian spirit should not be served in tumblers but in stemmed glasses. Their characteristic shape brings out and releases the various nuances and expressions of grappa, while avoiding contact with the spirit. The classic grip is to hold the glass between thumb and index finger on the stem, with the middle finger supporting the foot; this avoids holding the glass by the bowl and so prevents the grappa from warming too much and its aromas from evaporating.<\/p>\n<p>It is worth remembering that not all grappa is the same and that, for this reason, when tasted mindfully it calls for different glasses depending on the type of spirit.<\/p>\n<p><strong>White grappa<\/strong>, for example, being a young, energetic and clear spirit, naturally free of any aromas other than those of the pomace that defines it, should be served in a tulip glass or a flute that is not too narrow and not too tall, to enhance the aroma and allow the scents to be fully perceived.<\/p>\n<p><strong>For barrique-aged grappas<\/strong>, glasses wider than those for young grappa are recommended: wide tulip glasses, which increase contact between the spirit and the air, allowing the aromas to volatilise ideally and release them gradually to the nose.<\/p>\n<p><strong>For grappas aged at least 10 years<\/strong> and for aromatic grappas, stemmed tulip glasses are not needed; instead, an exceptional glass is recommended: the balloon. These are very large glasses, with a rounded bowl at the bottom narrowing towards the top to preserve the spirit\u2019s aromas, allow it to breathe well and enhance the tasting. <\/p>\n<div id=\"A7\"> <\/div>\n<h2>Grappas to give as gifts<\/h2>\n<p>Gift bottles of grappa are even more exclusive.
