Rum, the most common, comes from English-speaking countries and former British colonies; ron is the name preferred in Spanish, and rhum the name used in French.<\/p>\n<p>To sum up by country of production, <strong>rums<\/strong> come from Jamaica, Barbados, the British Windward Islands, Trinidad and Tobago, Saint Kitts and Demerara in Guyana. <strong>Rons<\/strong>, on the other hand, come from Cuba, Guatemala, Panama, the Dominican Republic, Puerto Rico, Nicaragua, Venezuela and Colombia. Finally, we find <strong>rhums<\/strong> in Haiti and the Antilles, specifically in Martinique and Guadeloupe.<\/p>\n<p>There is no certainty about the etymology of the name, but there are two schools of thought. The first holds that rum is the ending of the Latin name of the sugar cane used by monks, <em>Saccarhum officinarum<\/em>; the other maintains that rum derives from the word <em>rumbullion<\/em>, used in the south of Great Britain to describe the uproar that broke out on warships when spirits were handed out to the sailors.<\/p>\n<p>Rum, in fact, <strong>is a spirit<\/strong>. It is made by <strong>distilling sugar cane<\/strong> and, depending on how this is done, it can be classified into different types.<strong><br \/><\/strong><\/p>\n<div id=\"A2\">\u00a0<\/div>\n<h2>Agricole rum vs industrial rum<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"\/wp-content\/uploads\/blog\/rum-agricolo-vs-rum-industriale.webp\" alt=\"Agricole rum vs industrial rum\" width=\"870\" height=\"300\" \/><\/p>\n<p>Sugar cane is native to New Guinea. First brought to Asia Minor by Alexander the Great, it reached the Mediterranean with the Arabs and the Americas thanks to Christopher Columbus. It was in South America that it was distilled for the first time. At first the product obtained was sugar; later molasses, the residue of sugar processing, took hold, and it was from molasses that many of the rums exported to and enjoyed in Europe began to be made.<\/p>\n<p><strong>It is the very raw material used for fermentation that marks the main difference between agricole rum and industrial rum<\/strong>.<\/p>\n<p><strong>Agricole rum<\/strong> comes from fermenting the <strong>juice pressed from sugar cane<\/strong>, the \u201cvesou\u201d; agricole rum is therefore made from pure cane juice, which is fermented and distilled in copper stills, sometimes twice. <strong>Industrial<\/strong> rum, by contrast, is made <strong>from molasses<\/strong>: once extracted, the juice is sent to sugar mills that extract the sugar from it; the processing residues, still rich in sugar, go to the distilleries, which ferment the molasses with the addition of yeasts.<\/p>\n<p>There is no precise set of rules governing rum distillation: producers can choose different stills and distillation methods, all of which lead to a spirit that must then be aged. This ageing can take place in steel vessels or in casks, where the spirit loses much of its alcoholic strength and gains the aromas and scents that will become the distinctive features of the rum. Cask ageing, favoured by most distilleries, shapes the character of the rum, but origin is certainly another factor that gives the final product a finer sensory profile: <strong>agricole rums generally rank among the best<\/strong>, the most prized by consumers&#8217; palates.<\/p>\n<p>Among the most exclusive agricole rums, the one from <strong>Martinique<\/strong> stands out, <strong>the only one to hold an AOC (Appellation d&#8217;Origine Contr\u00f4l\u00e9e)<\/strong> and to be produced under a precise regulation that sets out the production rules, from raw material to ageing. The sugar cane, for example, must be grown only in a defined area of the island, its yield is subject to limits and certain substances are banned, and the cane variety must be among those approved under the AOC.
