In fact, it was other countries such as Switzerland, Germany and Austria that first appreciated Capovilla\u2019s products, because years ago a fruit spirit in Italy would not have received the credit it deserved.<\/p>\n<p>Today its quality and undeniable worth are clear: they come from a journey of care and attention that begins with the choice of raw materials.<\/p>\n<h2><a href=\"\/en\/marchio\/capovilla-distillati\/\">Our selection of Capovilla spirits<\/a><\/h2>\n<h3>Capovilla grappas<\/h3>\n<p>Noble and exclusive, Capovilla grappas are the result of experience that has grown through travel, knowledge and constant research. <strong>The raw materials always come first<\/strong>; from them come the Veneto distillery\u2019s various grappas:<\/p>\n<ul>\n<li>Grappa di Tabacco, intense and thrilling, is an aged grappa made from the smoked tobacco leaves used to produce the two hand-made Tuscan cigars, the original Toscano and the Moro;<\/li>\n<li>Grappa di Amarone, refined and assertive, is made from the pomace of the famous Amarone della Valpolicella;<\/li>\n<li>Grappa di Cabernet Sauvignon, distilled from the pomace of the wine of the same name, is yet another confirmation of Capovilla\u2019s quality;<\/li>\n<li>Grappa di Traminer, refined and intense in character, comes from the famous white grape variety of Alto Adige;<\/li>\n<li>Grappa di Merlot, persistent and with good complexity, inherits its character from Merlot pomace;<\/li>\n<li>Grappa di Barolo, strong and pleasant, stands out for the aromatic notes of Barolo Nebbiolo;<\/li>\n<li>Grappa di Ribolla Gravner, another spirit unique of its kind, is born of a collaboration with a great producer from the world of wine, Josko Gravner;<\/li>\n<li>Grappa di Brunello, with a long and very pleasant finish, inherits every nuance of the famous Brunello di Montalcino.<\/li>\n<\/ul>\n<h3>Capovilla fruit brandies<\/h3>\n<p>The star is fruit, a noble raw material that Capovilla partly grows on its own land and partly sources from other places where certain fruits grow better. The aim is to start from an excellent base to obtain particular spirits, because \u201cThe better the fruit, the better the final product\u201d. Every Capovilla fruit brandy <strong>is made only with spring water, with no added sugar or flavourings<\/strong>:<\/p>\n<ul>\n<li>Acquavite Prunus Aurum, strong and aromatic, is the result of research and experimentation with plums and damsons aged for several years in wood;<\/li>\n<li>Acquavite di Sorbo dell\u2019uccellatore, with an intense scent and a persistent flavour, is made from the berries of a plant that grows wild at around 800 m above sea level, the rowan or Sorbo dell\u2019uccellatore;<\/li>\n<li>Acquavite di prugne selvatiche, refined in its crystal-clear colour, keeps the typical hints of wild fruit, in this case wild plums;<\/li>\n<li>Acquavite di pere Williams, further confirmation of Capovilla\u2019s exclusive work, comes from fermented Williams, organic pears from Trentino and Alto Adige;<\/li>\n<li>Acquavite di ciliegie duroni, the remarkable result of double bain-marie distillation of Marostica duroni cherries, a fruit with protected geographical indication.<\/li>\n<\/ul>\n<h3>Capovilla rums<\/h3>\n<p>Labels that astonish for their taste and their story. When he began experimenting with rum production, Capovilla barely knew sugar cane as a raw material.<\/p>\n<p>The rum he makes is agricole, that is made directly from cane juice rather than from the by-products of sugar processing; the juice is not diluted, fermentations are very long and distillation is double and in a bain-marie, just as with the fruit. These methods also remove a toxic substance often found in agricole rums and, what\u2019s more, the fermentation is clean and preserves all the richness and properties of the raw materials.<\/p>\n<p>The flagship product is <strong>Rhum Rhum Liberation<\/strong>, born almost by chance out of Velier\u2019s wish to create one of the best agricole rums in the world: and who better than Capovilla to make it?<\/p>\n<p>Elegant and smooth, it is rich, superb and unique in its field because every step of its production process is extreme and meticulous: according to Whisky Magazine, Rhum Rhum Liberation is <strong>the best agricole rum in the world<\/strong>.<\/p>\n<p>Rhum Rhum is a confirmation, a further guarantee of a know-how defined by passion, research and determination.
