Poli Distillerie celebrates 125 years with a limited edition amaro, it has a burnt earth colour, the aroma is intense and full, with notes of spices and officinal herbs combined with a slight hint of mint and toasted oak, on the palate it is intense and bitter with a refreshing finish, reminiscent of spicy hints in taste.
The history of the Poli distilleries began in 1898 in a tavern in Schiavon in the Province of Vicenza by GioBatta, great grandfather of the current owners, who with his still pulled by a cart distilled the pomace collected on the farms of the Venetian foothills, the cradle of grappa. Today the company is in its fourth generation and has evolved over the years by integrating care and respect for tradition with research and innovation that have brought the art of distillation to the present day. From the mobile still, we moved on to various expansions of well-sized systems of grandfather Giovanni, up to the last one installed by Jacopo Poli in 1983 which has 12 copper boilers heated by flowing steam, according to an artisanal and discontinuous method, ideal for the processing of red pomace. If we add to this the projects developed with the San Michele all'Adige Agricultural Institute and the University of Trento in 2003 to produce an innovative bain-marie still operating under vacuum, we have a measure of the bond and value that this family has created on the territory , nurturing and developing ancient traditions to this day.
The history of Amaro Vaca Mora is linked to the opening of the Osteria "Al Cappello" by GioBatta Poli in 1885 near the Schiavon railway station, which was one of the first villages encountered when going towards Vicenza from the plateau of Asiago, a section affected in those years by fervent industrial development. Shortly thereafter, the long-awaited Vaca Mora steam train, black cow in dialect, arrived in front of the tavern, and while waiting, passengers and sometimes the train driver sipped that amaro prepared by hand in the room by infusing herbs, citrus fruit peels and roots. . A few drops later in 1898 the Poli Distilleries were born in that Osteria.
125 years of the Poli Distilleries and 30 years of the Poli Grappa Museum, a significant double anniversary because it tells the values that guide this Venetian company: family, craftsmanship and culture. The 4th generation, to celebrate the 125th anniversary, presented a limited edition of 4,125 numbered bottles of Vaca Mora Riserva. A version aged one year in barrique of the historic bitter to which the birth of the Distillery is closely linked and which is still prepared today by infusing sixteen herbs and spices according to the recipe of the founder Gio Batta Poli.
