Gold is the Extra Dry Millesimato version produced by Vincenzo Toffoli with Glera grapes in the D.O.C.G. Conegliano Valdobbiane. At sight it is straw yellow with greenish reflections and a fine and persistent perlage. The nose prevails floral hints and notes of fresh fruit and citrus. The taste is harmonious in perfect balance between acidity and softness.

Vincenzo Toffoli was passionate about viticulture from a young age, and after a period of emigrant for 12 years in Great Britain, he returned to his Veneto region where he bought a 5-hectare farm in Refrontolo, a town in the heart of the historic production area of ​​Conegliano Valdobbiadene Prosecco Superior DOCG In 1964 he crowned a dream and founded the farm that still bears his name today, where he raises dairy cows, cultivates vineyards, cares for his forest. His passion for peasant life and its most genuine aspects is passed down to his sons Sante, Luciano, Gabriele who now lead the family business, together with the grandchildren who represent the third generation, trained at the renowned School of Enology G.B. Cerletti of Conegliano. The estate covers 20 hectares on the hills of Refrontolo at 200 meters above sea level, at the foot of the Treviso Alps, in the D.O.C.G. Collli di Conegliano, where the vineyards enjoy excellent exposure and a sandy and clayey soil rich in minerals. A family history made of passion, love for the land and respect for the ancient traditions preserved in this area dedicated to viticulture.

The Glera grapes from which Brut Millesimato Extra Dry Gold is obtained are manually harvested in mid-September, slightly earlier than their complete maturation. The white vinification involves pressing the bunches with a vacuum-packed lung press in the absence of oxygen at controlled temperature, followed by static cold decanting for the separation of stalks, skins and grape seeds. Following the first fermentation phase with indigenous yeasts and constant temperature control which rises during fermentation. Then the second fermentation takes place with the Charmat - Martinotti method which lasts at least two months and is monitored daily, considering that during this process both fermentation and temperature significantly influence the quality of the sparkling wine. An ideal prosecco for aperitifs, and in perfect combination with fish and white meat dishes.
