Umberto Bortolotti's Cellar represents an important winery of the Italian wine tradition linked to the town of Valdobbiadene on the Treviso foothills. A history made of peasant culture handed down over time, strong of a soil rich in minerals and a climate particularly favorable to the production of excellent grapes. In this context, the phenomenon of prosecco was born, with the sparkling process in autoclave or the Charmat or Martinotti method, and the national success first and then internationally, of the sparkling wine Conegliano Valdobbiadene Prosecco. Today the Umberto Bortolotti company produces a wide range of Valdobbiadene DOCG wines up to elaborate wines such as the Bortolotti Code "10-94" to affirm its great sparkling wine competence.

Oltre is the first sparkling wine obtained from two varieties particularly resistant to fungal diseases such as Johanniter, born in 1968 as a cross between Riesling and other varieties, and the Bronner particularly similar to Pinot Blanc, born in 1975. For this reason, in the vineyard they are not used herbicides and antiparasitic treatments, obtaining pure and suitable grapes for a high quality oenology. The wine referments in steel for 7 months and ages in bottle for further two months. Umberto Bortolotti's cellar with this sparkling wine goes beyond the concept of organic agriculture.
