The St Michael - Eppan winery is located on the outskirts of Bolzano, in a small town in the heart of the most important wine-growing area in the region.

It was founded in 1907 and today has 340 families of winemakers who have shared and passed on the values ​​and principles underlying their work, a work made of tradition and quality. Thanks to union and love for the land and the environment, the St Michael - Eppan winery continues to produce unique wines. In particular, four lines are produced: Appius, Sanct Valentin, Selezione, Classica. The wine is matured in steel, wooden barrels and barriques - tonneaux. Respect for the grapes is the key principle that guides the winemaking process: tradition is combined with technological innovations, the particularities of the individual grapes are preserved and enhanced, offering an absolutely unforgettable product.

Pinot Bianco Schulthaus was born in the Schulthaus vineyards, between 540 and 620 meters above sea level; here the microclimate is mild, characterized by cool nights and temperature variations which are perfect for the correct maturation of the grapes. The vinification is done by hand and takes place in mid-September, approximately 85% of the harvest ferments in steel vats, the remainder in wooden barrels with subsequent malolactic fermentation taking place. Finally, the fermentation takes place in the bottle for about two months.
