Not all estates can boast a long winemaking history like that of Novacella Abbey, where the Augustinian order has been producing wine since 1142! Centuries of experience, combined with modern technology and the great passion of those who collaborate in the vineyard and in the cellar, leads to the creation of wines with great personality capable of expressing all the potential of this border terroir. Novacella Abbey is located in the northernmost wine-growing area of Italy, in Alto Adige, where the altitude, between 600 and 900 meters, the cool climate and mineral-rich soils, allow for the optimal development of aromas and flavor, typical characteristics of the wines of the Isarco Valley such as Sylvaner, Müller Thurgau, Kerner, Gewürztraminer, Veltliner, whose grapes thrive on the sunny slopes around Novacella. The red grape varieties owned by the estate, however, are grown further south in the region, namely Lagrein near Bolzano, Schiava Gentile, Pinot Noir and Moscato Rosa on the Corniano estate. Today the Abbey has 25 hectares of property, but it produces wine from grapes grown on about fifty hectares cultivated by the cooperative's members. The control of the grapes by the members and the passion with which the Abbey has dedicated itself to the production of wines for centuries are synonymous with absolute quality, with labels that are faithful custodians of centuries-old traditions, never betrayed by innovative methodologies.
Praepositus Sauvignon from Abbazia di Novacella is a white wine with great personality, an authentic expression of the Alto Adige terroir and the winery's centuries-old experience. Produced exclusively with Sauvignon Blanc grapes from selected vineyards, this wine stands out for its aromatic complexity and balanced structure. The grapes are harvested by hand and carefully selected in the vineyard. After destemming and soft pressing, the must ferments in stainless steel at a controlled temperature. The wine is partly aged on the fine lees for several months, again in steel, to enhance the freshness and minerality of the wine. Abbazia di Novacella, one of the oldest wineries in Italy, is located in the Isarco Valley, in Alto Adige. The vineyards, facing south and south-west, enjoy a cool, breezy climate and a moraine soil rich in minerals. The viticulture practiced is sustainable, respecting the environment and tradition.
Intense straw yellow color with greenish reflections, indicative of the youth and freshness of the wine, the nose is broad and complex, dominated by intense and persistent fruity notes. Aromas of ripe white pulp fruit (peach, pear), citrus fruits (grapefruit, lime), aromatic herbs (mint, sage) and floral hints (elderberry, acacia) are perceived. In the background, delicate mineral and vegetal notes emerge that give the wine a strong personality. On the palate, Praepositus Sauvignon is full, enveloping and very balanced. The attack is fresh and savoury, with good acidity that supports the structure. The taste sensation is characterised by a pleasant softness and a long aromatic persistence, with a finish that recalls the fruity and mineral notes perceived on the nose. Praepositus Sauvignon is a versatile wine that lends itself to numerous gastronomic pairings. Excellent as an aperitif, it pairs perfectly with fish-based dishes, shellfish, white meats and fresh cheeses. It is ideal for accompanying delicate appetizers, seafood risottos and first courses with light sauces.
