Fallwind Chardonnay

Cantina St Michael-Eppan is a winery with a long tradition, founded in 1907. Located in the heart of Alto Adige, in an area suited to viticulture, the winery is dedicated to the production of high-quality wines, the result of careful selection of grapes and cutting-edge production processes. Thanks to a deep knowledge of the terroir and a respectful approach to nature, the winery is able to best express the characteristics of each individual grape variety. Manual harvesting, followed by careful vinification in a modern plant, guarantees the highest quality of the products.

The vinification of Fallwind Chardonnay from the St Michael-Eppan winery, conducted with traditional and modern techniques, enhances the intrinsic characteristics of the grape variety, giving the wine a complex structure and a unique harmony of taste. The alcoholic fermentation, carried out partly in steel and partly in wood, helps to develop intense fruity aromas, delicate floral notes and spicy hints, typical of the variety.

When tasted, Fallwind Chardonnay has a bright straw yellow color, with golden reflections. On the nose, a broad and complex bouquet, characterized by aromas of ripe yellow pulp fruit (peach, pineapple), citrus notes (citron, grapefruit), floral nuances (hawthorn, acacia) and light vanilla and toasted hints, resulting from aging in wood.

On the palate, the structure is full and enveloping, with a lively acidity that perfectly balances the softness and flavor. The finish is long and persistent, with a return of the fruity and floral aromas perceived on the nose.

Fallwind Chardonnay, thanks to its elegance and versatility, pairs perfectly with a wide range of dishes, from seafood appetizers to tasty first courses, from fish second courses to mature cheeses. It is also ideal on its own, as a meditation or to accompany an aperitif.
