The history of wine cellars is often the story of a family and its ability to enhance tradition and innovation, in a combination that has stood the test of time. And so it was that in Termeno, a municipality in Alto Adige, in Maria Hofstӓtter's "Swarzer Adler" (Black Eagle) inn, an ancient imperial-royal postal station from the 16th century. where her husband Josef originally produced his first wines, her great-grandson Martin Foradori Hofstӓtter founded the current winery which has owed its great success to her intuitions since the 1990s. The heritage of knowledge of an ancient family of winemakers, the excellent vineyards of the eastern side of Alto Adige, the respect for traditions combined with the virtuous use of technology, are the keystone that has allowed this winery to produce wines excellent in perfect South Tyrolean style. Among the appreciable intuitions of Martin Foradori Hofstӓtter, the construction in 1997 of the avant-garde "wine tower" entirely made of wood which responded to the need to expand the cellar spaces in height rather than in extension, in a very limited area. Or the revolutionary conical-shaped concrete barrels with low energy impact for the fermentation of grapes, installed in 2013 and an absolute novelty for Alto Adige.

Kolbenhof is produced with only grapes of the Gewurztraminer variety coming from the vineyards between Termeno and Cortaccia and perfectly expresses the elegance and refinement of the typical processes of the Hofstätter winery. The work in the cellar involves pressing the grapes, as we want the must to remain in contact with the skins for a few hours to enhance its varietal characteristics. After soft pressing and sedimentation of the must, alcoholic fermentation in steel at a controlled temperature follows. The refinement phase is carried out in steel on the fine yeasts for 8 months, which are moved weekly through the bâtonnage technique.

Kolbenhof is Hofstätter's Gewurztraminer with a straw yellow color and aromas of peach, litchi, yellow rose, apricots, sage and exotic scents. The taste is fresh and persistent with fruity notes.
