Mock

The Sauvignon Mock from the Cantina di Bolzano is located on the estate of the same name, whose vineyards extend along the steep slopes in the surroundings of Bolzano, at an altitude of 500 meters above sea level.
It is produced only from Sauvignon Blanc grapes, harvested during the month of September. After soft pressing of the grapes, the must ferments in steel at a controlled temperature. The wine matures in steel barrels inside which it preserves its freshness.

Mock Sauvignon produced by the Kellerei Bozen winery has a straw yellow color with greenish nuances. On the nose the aromas are fruity, yellow peach and pink grapefruit, acacia and elderberry, with floral notes, mint, nettle and tomato leaves. On the palate it has a fruity and sweet taste with light acidic notes.
