Manual harvest in the second decade of September, soft pressing in an inert atmosphere, static decantation of the must, fermentation at controlled temperature in stainless steel tanks, aging on the lyses for about 8 months in second and third passage French oak "tonnaux" aging in bottle for about 6 months before release.
