The Dégorgement Tardif (the disgorgement delayed over time) through the long and continuous lysis of the yeasts allows us to create a product that is the very soul of our territory, combining exceptional complexity and authority with a wise elegance. The color is golden, slightly loaded, bright and lively. The nose offers a range of fragrances ranging from bread crust to vanilla tones, over a base of ripe apple cream, aromatic herbs and dried fruit (almonds, hazelnuts and peanuts). The taste is pure cream, full and round in its complexity, where you can find the notes of ripe fruit, relaunched on a background of citrus and spices. A fresh and lively wine, but also full and solid structure, with a very persistent finish, absolute prince in occasions of important conviviality.
