Cembali is the Nero d'Avola in purity of the Baglio di Pianetto grown in the vineyards of Contrada Baroni in Noto. The color is an amaranth red with ruby reflections, the aroma is intense with ripe fruit, marasca cherries, sour cherries, plums and a spicy vein of cinnamon. On the palate it's rich, a red with a great personality whose long aging gives a light hint of chocolate in the mouth.
With sulphites.
The Baglio di Pianetto winery after more than 20 years from its birth is now a consolidated reality in Sicilian oenology thanks to the passionate entrepreneurial activity of Count Paolo Marzotto and his family. The basic philosophy is the continuous research between tradition and innovation, with a passionate care for the raw material of excellence and respect for nature and the surrounding environment, aware that good wine is born in the vineyard rather than in the cellar. And so it's that in the countryside of Palermo and in the Val di Noto, in two completely different and in some ways complementary terroirs, about 160 hectares of vineyards converted to organic are cultivated, which first conquered Sicilian drinkers and then all the rsto of the world. 50% of Baglio di Pianetto's production is directed abroad between the United States, Japan, Germany, Belgium, Switzerland, Russia, France, Norway, the Czech Republic, Canada and being consolidated in many other countries, thanks to the most genuine and authentic expression of the land of Sicily.
The Cembali is a reserve whose name evokes the sounds of the wind between the branches of the vines of Contrada Baroni in Noto similar to the sound of the harpsichord. A wine as elegant as the musical instrument to which it is inspired, whose grapes of the Sicilian queen variety Nero d'Avola are those of the old sapling vineyards planted and inherited from the old property. After the manual and careful selection of the grapes, followed by destemming and soft pressing, fermentation begins with the natural yeasts of the grapes, and subsequent ripening with punching down and with the delestage technique to preserve the peculiar characteristics of the grape. Aging takes place in French oak barrels for at least 12 months, both new and second and third passage depending on the vintage. The selection of the best barriques is then racked into large barrels for a further 6 months, followed by the final passage in the bottle where the wine rests for another 36 months. The result is a sumptuous wine, with great character that enhances the great value of the Noto terroir.
