Enrico Serafino realized his dream of becoming a wine producer in 1878, when he moved to Canale in the heart of the best Piedmontese wine production area. With an act of strong will despite having no connection with the world of wine he began the production of Barolo Barbaresco and Classic Method. In 1882 the idea of moving to Canale was confirmed as an excellent choice, thanks to the opening of a railway connection between Turin and Genoa, which created a real advantage in the transport of wines. In 1897 Enrico Serafino began shipping wines abroad starting from Europe and heading towards the Americas. On 22 March 1918 Enrico Serafino died, now recognized as a true patriarch of Italian wine. from here his sons took over the management of the renowned winery. in 1928, thanks to the constant commitment of the winery, Luigi Enrico, son of the founder, received recognition in the ''Knight's Cross of the Order of San Silvestro'' awarded by S.S. Pope Pius XI. In 1994 Enrico Serafino became part of the ''Classic Method Spumante Consortium - Alta Langa Project''. In the autumn of this year the first 20 hectares of experimental vineyard go into production, giving rise to the first harvest in the history of the denomination.

The Moscato d'Asti "Black" of the Enrico Serafino winery was born in the company vineyards located in Santo Stefano Belbo and Mango, in the province of Cuneo. It is a wine produced with 100% Moscato Bianco grapes, grown on clayey-loamy soils. After the manual harvest, the bunches are carefully selected and cooled with carbonic snow to prevent oxidation, then they are subjected to soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature and is then interrupted to maintain the sugars and natural aromas of the grapes. The second fermentation then takes place in an autoclave which allows the second fermentation.
