I Boschi Chardonnay

The cellar was renovated in 1998 and equipped with the latest technology to respect the tradition in ensuring high quality standards. E 'consists of two main parts: the local wine-making, taken from the most modern part of the farmhouse dates back to the' 60s, and those of aging that have been created in the oldest part of the farmhouse and are mostly basements. For the fermentation of musts are exclusively used stainless steel tanks of 30 and 50 Hl whose temperature can be controlled at every stage to ensure the best maceration and fermentation conditions. of different sized wooden casks are used for malolactic fermentation and aging of wines.

I Boschi Tenuta Olim Bauda is a 100% Chardonnay from vines grown in the vineyards north of Nizza Monferrato. After the harvest, the grapes rest in the cellar at a controlled temperature to then undergo destemming and crushing. The must is partly vinified in barriques where it completes the alcoholic fermentation and the remaining part in steel. After the refinement on the noble lees kept in suspension by continuous batonnage, the wine is bottled.

The I Boschi Tenuta Olim Bauda chardonnay has a deep straw yellow color with a complex and intense bouquet with pleasant hints of citrus and tropical fruit and melon with a buttery note that completes the olfactory experience. On the palate full-bodied and rich but with a freshness that balances the drink. Good persistence.
