Zero Riserva Pas Dosé from the Enrico Serafino winery is a product with a light straw yellow color, with a fine and persistent perlage, the nose is incredibly broad and complex, with hints of lime blossom, honey, white fruit and citrus fruits that mix with the subtle notes of Bread crust. On the palate it is complex, full-bodied and elegant, with a very long and mineral finish.

Enrico Serafino fulfilled his dream of becoming a wine producer in 1878, when he moved to Canale in the heart of the best Piedmontese wine production area. With an act of strong will, despite having no connection with the world of wine, he began the production of Barolo Barbaresco and Metodo Classico. In 1882 the idea of ​​moving to Canale was confirmed as an excellent choice, thanks to the opening of a railway link between Turin and Genoa, which created a real advantage in the transport of wines. In 1897 Enrico Serafino began shipping wines abroad starting from Europe and heading towards the Americas. On March 22, 1918, Enrico Serafino died, now recognized as a true patriarch of Italian wine. from here his sons take over the leadership of the renowned winery. in 1928 thanks to the constant commitment of the Luigi Enrico winery, son of the founder, he received an award in the `` Knight's Cross of the Order of San Silvestro '' conferred by S.S. Pope Pius XI. In 1994 Enrico Serafino joined the '' Consortium of the Classic Method Sparkling Wine - Alta Langa Project ''. In the autumn of this year, the first 20 hectares of experimental vineyards go into production, giving rise to the first harvest in the history of the appellation.

2015 was characterized by a favorable climate throughout the season, from flowering to harvest. The summer was hot and dry, with few rainy days that offered very healthy grapes. In September the weather was mild with sunny days and cool nights. Thanks to this, the harvest was brought forward (about 7 days) with grapes that were perfectly ripe and well balanced. The end result was a vintage with elegant wines and full expression of the terroir. The harvest is manual and the grapes placed in small boxes; the bunches are selected by hand on the vibrating table and pressed in an inert environment (nitrogen) with a yield of 45% in the must. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible. The must is fermented in stainless steel tanks at a controlled temperature and stored for 6 months on the lees with bâtonnage. The second fermentation is carried out according to the traditional method of fermentation in the bottle, with aging on the lees for at least 72 months and late disgorgement. We proudly avoid any liqueur d’expédition by creating a classic zero dosàge method such as pas dosé.
