San Giovanni

The `` Tenuta Olim Bauda '' winery was born in Piedmont in 1998, a wonderful reality that is run by the brothers Dino, Diana and Gianni Bertolino, who thanks to their immense passion and dedication, have brought their company to the highest levels of Asti oenology. A winery that boasts a centuries-old tradition in the production and marketing of wine, in fact it all began with the great-grandfather of the three brothers, Giacinto. The historic heart of the Olim Bauda estates is the parcel around the manor house, on the hills of Nizza Monferrato, planted by his father in 1961, with barbera and moscato. From this vineyard the estate has expanded until today, reaching 30 hectares of vineyards, all followed with sustainable agriculture practices.

The selection of Moscato grapes takes place in a decidedly late autumn period, as regards this type of grapes. In fact, at the time of harvesting these are decidedly ripe and the withering phase begins on the plant. The harvested grapes are then placed on racks and left to dry in the farmhouse of the Estate. Immediately after pressing, the must is placed in small barrels in which fermentation takes place which lasts for a long period, being bottled after a long refinement in small oak barrels.
