The '' Tenute Olim Bauda '' winery was born in Piedmont in 1998, a wonderful reality that is run by the brothers Dino, Diana and Gianni Bertolino, who thanks to their immense passion and dedication, have brought their company to the highest levels of Asti oenology. A winery that boasts a centuries-old tradition in the production and marketing of wine, in fact it all began with the great-grandfather of the three brothers, Giacinto. The historic heart of the Olim Bauda estates is the parcel around the manor house, on the hills of Nizza Monferrato, planted by his father in 1961, with barbera and moscato. From this vineyard the estate has expanded until today, reaching 30 hectares of vineyards, all followed with sustainable agriculture practices.

The vinification is carried out on the skins for a few hours at low temperatures, where the must is separated and subjected to a first filtration to make it more limpid. Fermentation, on the other hand, takes place in autoclaves at rather low temperatures, for a period ranging from about 20 to 30 days, during fermentation the second fermentation takes place. To stop fermentation, the must is then further cooled and microfiltered for bottling
