The extra dry Pinot Nero quality sparkling wine by Vanzini represents an oenological excellence of the Oltrepò Pavese, the result of careful work in the vineyard and traditional winemaking. This product stands out for its elegance and aromatic complexity, typical characteristics of the Pinot Nero grape variety, combined with the freshness and vivacity typical of sparkling winemaking. The Pinot Nero grapes, coming from selected vineyards of the Oltrepò Pavese, are hand-picked and subjected to a soft pressing to obtain a high-quality free-run must. Fermentation takes place in steel at a controlled temperature, followed by a second fermentation in an autoclave according to the classic method. Aging on the lees for at least 12 months helps to give the wine complexity and finesse.

Bright straw-yellow color with greenish reflections, an indication of youth and freshness. The bouquet is broad and complex, with fruity notes of golden apple, Williams pear and white peach, enriched by delicate floral nuances of acacia and hawthorn. Citrus hints of cedar and grapefruit are also perceived, which give a pleasant freshness. In the background, light spicy notes of vanilla and ginger emerge, the result of aging on the yeasts. On the palate it is balanced and harmonious, with a good structure and a persistent fine and persistent bubble. The flavor is well integrated with the residual sweetness, typical of the extra dry type. The finish is long and pleasant, with returns of white pulp fruit and mineral notes. The extra dry Pinot Nero quality sparkling wine by Vanzini is a versatile wine, ideal as an aperitif and to accompany delicate and refined dishes. It pairs perfectly with seafood crudités, fish carpaccio, tartare, cured meats and fresh cheeses. Seafood risottos, pasta with delicate fish or vegetable sauces. Baked fish, white meats and poultry.
