La Peccatrice

Azienda Agricola Bisi was born in Pavia, in Lombardy, from a land where wines with a unique and unmistakable character are born, which are the expression of the place and of man. In 1926 the grandfather bought a vineyard called Roncolongo, giving life to the company. Subsequently he built a small cellar for the transformation of his grapes and the aging of his wines, setting himself a fundamental objective: to produce quality wines. Despite the passing of the years and the succession of three generations, the love for the land and the passion for wine has remained the fulcrum of all the activities and initiatives that have determined the development and growth of the company up to the present dimension. The vines are grown directly according to the best tradition and with the utmost respect for the environment. The grapes are harvested, selected and immediately vinified according to the biological ripening rhythms. A consolidated experience guides all the subsequent phases to guarantee the maximum authenticity and quality of the wines: wines that are an expression of the territory.

La Peccatrice Bisi didactically depict the grape variety of Croatina from the Oltrepò Pavese area still modestly considered. The grapes are grown in Guyot from a land of 4600 plants per hectare, from 23-year-old vines, with a yield of 90 quintals. They are harvested by hand when they reach a high level of ripeness, in order to have a notable aromatic richness. Fermentation takes place in stainless steel tanks at a controlled temperature with maceration on the skins. The liveliness is due to a natural refermentation in autoclave with the Martinotti or Charmat method. A brief refinement in the bottle follows before release. The whole process is managed with agricultural practices that are very respectful of the environment, which follow a protocol aimed at safeguarding biodiversity in the vineyard.

La Peccatrice Bisi is a red with a lively, fresh and fruity heart. It has a ruby ​​color with violet reflections, excellent chromatic intensity. The nose is generous, intense and persistent, with hints of small red fruit. On the palate it is full, full-bodied and soft, with great balance and pleasantness, accompanied by lively and pleasant tannins. Soft and balanced, with a dry finish.
